What is Hakuhaku

The pride of Fukuoka and Hakata

We want more people to know about the “food” and “culture” that Fukuoka and Hakata are proud of nationwide.
Born in Hakata with the desire to revitalize the region,
This is a museum produced by Fukuya, a mentaiko manufacturer with whom we have worked together.
"Hakuhaku" is a combination of the two characters "Haku", which means "expo" of the food and culture of Hakata.

Including various exhibits and experience corners, a factory tour of mentaiko,
A cafe corner with a menu where you can enjoy mentaiko,
We have prepared shops that sell Hakata specialties and rare items.
We hope that you will experience and discover the charms of Fukuoka and Hakata.

On April 1, 2024, I was appointed as the director of "Hakata Food and Culture Museum Hakuhaku."
Hakuhaku took root in its current location as a manufacturing factory for Fukuya's mentaiko. Later, in order to convey "Hakata's culture and its charm" to more people, we opened "Hakata Food and Culture Museum Hakuhaku" on April 24, 2013 as a facility where you can experience Hakata's food and culture in addition to factory tours. It opened on the day.

After a period of refraining from going out due to the spread of the new coronavirus, we are finally able to enjoy traveling and going out. In Hakata, Dontaku in May, Hakata Gion Yamakasa in July, and Hojokai in September have also resumed. We would like to do our best to welcome those who have wanted to visit Fukuoka but were unable to do so, so that they will now be glad to have come to Fukuoka.

Our goal is to convey the charms of Fukuoka and Hakata to everyone who visits Hakuhaku, and to help as many people as possible fall in love with Fukuoka and Hakata, as inherited from our founder Toshio Kawahara. We are confident that this will lead to the feeling of giving back.

About Fukuya

At that time, the city of Hakata was a burnt field due to the war damage, and in 1948 (Showa 23), when signs of recovery gradually began to appear, a small grocery store was born in a corner of Nakasu, Hakata. The owner's name is Toshio Kawahara. This small store that I started with my wife, Chizuko, was the beginning of the history of Fukuya, which has continued for more than half a century. Toshio was unable to forget the taste of the tarako kimchi-zuke that he ate in Busan, South Korea during the war, and tried to recreate the taste in Hakata, which he had repatriated after the war. On the day of the Toka Ebisu Shrine Grand Festival, which wishes for prosperous business, we sold “Aji no Mentaiko” for the first time in Japan.

At that time, the founder Kawahara disclosed the manufacturing method to traders without registering a trademark or obtaining a patent for the manufacturing method.
