Making delicious mentaiko starts with making a secret sauce. You can see how the raw cod roe is sorted, the quality is checked, and how the sauce is applied depending on the condition of the cod roe.

  • This is the secret sauce necessary to make delicious mentaiko.
  • Each cod roe is picked up and checked for size, softness, and flaws.
  • Sprinkle the red pepper powder on the mentaiko to adjust the spiciness of the mentaiko.
  • The amount of sauce is adjusted according to the size, softness, and condition of the cod roe.

Mentaiko that has finished aging is weighed to a predetermined amount and packed in a container. In 2019, the world's first production line that can automatically weigh mentaiko and put it into a container was introduced. Fukuya's automatic weighing machine weighs different weights of mentaiko, instantly selects them, and automatically puts them into a container. Mentaiko is soft and easily damaged, but with this machine, you can handle it as gently as you would by hand.
